The fall weather creates the perfect conditions for growing sweet potatoes, making them readily available in grocery stores and farmers' markets.
Throughout history, sweet potatoes have been used in traditional fall dishes such as pies and soups. However, in recent years they have taken center stage as the star ingredient in mini casseroles. Variations and adaptations for dietary restrictions or personal preferences
Whether you have dietary restrictions or simply prefer to make healthier choices, there are many variations and adaptations that can be made to the mini sweet potato casserole recipe. By making a few simple substitutions, you can still enjoy this delicious fall side dish without compromising your dietary needs or personal preferences.
For those following a vegan diet, replacing the butter with coconut oil is a great option. Coconut oil adds a subtle sweetness and richness to the dish while also providing healthy fats. You can also substitute the honey with maple syrup or agave nectar for a vegan-friendly sweetener.
If you are gluten-free, using gluten-free breadcrumbs or almond flour instead of traditional breadcrumbs will keep this dish free from gluten. Additionally, swapping out regular flour for cassava flour in the topping mixture will create a crispy and flavorful crust without any gluten.
For individuals watching their sugar intake, using lower glycemic index sweeteners like stevia or monk fruit extract can be used in place of honey. These natural sweeteners will still provide the same level of sweetness but without causing spikes in blood sugar levels.
If you have lactose intolerance, using dairy-free alternatives such as almond milk or coconut milk in place of regular milk is an easy substitution. You could also use lactose-free cheese if desired.
For those looking to add more protein to their diet, incorporating chopped nuts such as almonds or pecans into the topping mixture will not only add texture but also additional protein. You could also mix in some cooked quinoa for an extra

2 eggs
1 teaspoon vanilla extract
Topping 1 cup brown sugar
½ cup all purpose flour
1 cup chopped pecans
½ cup unsalted butter, softened
