Pumpkin Pie Pancakes! Delish and Easy

The fall baking season is upon us and if you are like me, you always have extra pumpkin pie filling leftover, even though you have probably snuck some spoonfuls before storing them away. While playing around, I found this delish and ever so easy PUMPKIN PIE PANCAKES recipe. I have to be honest I was not a huge pumpkin fan until recently, but these are a must-try. This recipe is so easy that everyone will think you spent hours making these from scratch. You can use your home made leftover pie filler, but after these being requested several times I have started using the canned pie filling. This simple recipe will follow the buttermilk recipe on any boxed pancake mix. This recipe is not too far off your classic pancake recipe except for little tweaks here and there and extra ingredients. I have found the best pumpkin pie filler for this recipe is the Libby's Pumpkin Pie canned filler. You will first want to follow the directions on your box of pancake mix for the number of people that you are serving. Instead of water like it states, I use buttermilk. Buttermilk makes these pancakes so fluffy and tasty. I have five people so I always double the recipe on the box. Once you have gotten the basic batter mixed together this is where your tweaking will come in. I add a teaspoon of vanilla and a teaspoon of light brown sugar along with a teaspoon of nutmeg.

Slowly fold in the pie filling, now this is where it gets tricky, I like a mild pumpkin taste, the boys like a stronger taste. This is where you will have to play around with the recipe to fit your taste. When this is all done, I add a teaspoon of syrup. Mix everything well together and cook like you would do any other pancakes. You can top them with powdered sugar, syrup, or eat plain.

Boxed Pancake Mix of your choice

Buttermilk-replace water in box recipe with buttermilk

1 teaspoon of vanilla

1 teaspoon of light brown sugar

1 teaspoon of nutmeg

1 Can of Libby Pumpkin Pie Filling (to personal taste)

1 teaspoon of syrup

Cook on griddle

Top with powdered sugar, syrup, or fruit. This can be topped with whatever you prefer. Don't forget the whipped cream.
