1 cup butter

1/2 purple onion

1/2 tsp. coriander

1/3 tsp. cinnamon

1/3 tsp. powder

pinch of salt.





Instructions For The Pumpkin Butter Candle


1. Rinse the pumpkin and cut in half. Choose the more stable half. Remove the core and pith.

2. Scrape out the pumpkin flesh with a spoon and cut into small pieces. You will need approximately 1/4 cup of pumpkin flesh. Use the rest of the pumpkin for other dishes. Do not increase the amount of pumpkin pulp, the candle will not burn.

3. Peel the onions and chop finely. Place 1 tsp of butter in a pan and saute until transparent. Add the pumpkin and cook for a couple minutes with constant stirring over medium heat.

4. Cool the mixture and transfer it to a blender bowl. add the spices and puree the mixture.

5. Cut the room temperature butter into random pieces and place in the blender. Add the salt and beat the butter until smooth. Blot off excess juice from the pumpkin coulis. Transfer the butter to the bowls. Chill for 20 minutes in the refrigerator. Brush the cotton wick with butter and freeze. Make a hole in the center with a skewer and insert the wick. Freeze the bowls with pumpkin butter. To serve, place a buttered candle in the center of a serving plate. Arrange fresh artisan bread, tomato slices, aged cheese and salami slices around the candle. Enjoy!
