Bang Bang Shrimp

Ingredients
  

  • 1 lb large shrimp peeled, deveined
  • 1 cup cornstarch
  • vegetable oil for frying
  • salt and pepper to taste

For the Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tbsp rice vinegar
  • 1 tsp sriracha sauce adjust for spiced level
  • 1 tsp sugar

For Garnish

  • sliced green onion
  • diced tomatoes

Instructions
 

  • Heat oil in a skillet over medium-high heat.
  • Season shrimp with salt and pepper, then coat in cornstarch.
  • Fry shrimp in batches for 2-3 minutes per side. Drain on paper towels.
  • Mix mayonnaise, sweet chili sauce, rice vinegar, sriracha, and sugar to make the sauce.
  • Toss shrimp in the sauce until coated.
  • Garnish with green onions and tomatoes.
  • Serve as an appetizer or over rice or salad.
