Bang Bang Shrimp

- 1 lb large shrimp peeled, deveined
- 1 cup cornstarch
- vegetable oil for frying
- salt and pepper to taste
For the Bang Bang Sauce
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tbsp rice vinegar
- 1 tsp sriracha sauce adjust for spiced level
- 1 tsp sugar
For Garnish
- sliced green onion
- diced tomatoes
Heat oil in a skillet over medium-high heat.
Season shrimp with salt and pepper, then coat in cornstarch.
Fry shrimp in batches for 2-3 minutes per side. Drain on paper towels.
Mix mayonnaise, sweet chili sauce, rice vinegar, sriracha, and sugar to make the sauce.
Toss shrimp in the sauce until coated.
Garnish with green onions and tomatoes.
Serve as an appetizer or over rice or salad.
