Preheat the oven to 375°F.
Wash sushi rice and soak it for 10 minutes. Cook and season with rice vinegar and sugar.
Bake salmon for 15-20 minutes or cook in an air fryer for 12-15 minutes. Shred and combine with imitation crab, yum yum sauce, and salt.
Layer sushi rice in a casserole dish, press down, and top with nori sheets.
Add the seafood mixture, spread evenly, and bake for 10 minutes. Roast for 1-2 minutes and let cool.
Garnish with unagi sauce, yum yum sauce, furikake, black sesame seeds, scallions, and avocado.
Cut into portions and serve on nori sheets.
