Valentine's Day Whoopie pie

  • 3.5 butter
  • 1/2 cup powdered sugar in batter
  • 2 tbsp. strawberry liqueur
  • 2 tbsp. 33% cream in batter
  • 6 - 61/2 ounces of flour
  • 3 drops of red food coloring
  • sprinkles
  • For the cream
  • 3/4 cup cream
  • 2 tsp. powdered sugar
  • 1 drop of food coloring.

  • Before cooking, get the butter out ahead of time. It should be soft. Preheat the oven to 356°F. Line a baking tray with parchment. Place the soft butter in a bowl, add the powdered sugar, liqueur and cream. Whisk the mixture until smooth. Add the food coloring and stir.
  • Pour in the flour and knead the dough. Allow the dough to rest for 15 minutes under a towel in the refrigerator.
  • Roll out the dough into a 1/4-inch thick dough sheet. Using a 4-inch round cutter, cut out 8 circles. Transfer the circles to a baking tray. Cut hearts in 4 of them. Place the hearts on the baking sheet. Bake for 10-12 minutes until golden. Cool the cookies on a rack.
  • Whip the cream with the sugar until stiff peaks form. Tint the cream a light pink color. Transfer the whipped cream to a pastry bag.
  • Spread the cream on the cookie base. Place a heart cut-out cookie on top. Sprinkle with valentines before serving.
