Ingredients for 1 large serving:
2 small potatoes
2 tbsp. tzatziki sauce
1 boneless, skinless chicken thigh
1 pitas
2 tbsp. olive oil
1 tsp. paprika
1 tsp. dried Italian herbs
1 pink tomato
1/2 red salad onio
1/2 bunch of parsley
1 tbsp. apple cider vinegar
1/4 chili
salt to taste
Instructions
1. Marinate the chicken thigh. Rub chicken with spices and salt. Brush the chicken on all sides with olive oil. Allow to marinate for 30 minutes
2 Peeled potatoes, cut into slices and place in a plate. Season with salt and spices. Add the oil and mix the potato bars.
3. Peel red onion and cut into thin half-rings. Marinate the onions in vinegar diluted 1:1 with water
4. Place potatoes and chicken on Air Fryer rack. Cook at 375°F for about 25 minutes. Flip the meat and potatoes once.
5. Assembling the gyros. Slice chicken into thin strips. Lay out on a paper towel on a board. Heat the pita bread in the microwave for one minute. Arrange the chicken in the center. Sprinkle the chicken with small pieces of chili flakes. Tip the onion onto a sieve, remove excess marinade. Arrange it along the chicken strip. Slice the tomatoes thinly and arrange as in the photo. Arrange the potatoes around the edges.
Pinch the edges of the pita together, you can secure with toothpicks. Secure with a paper napkin. Just before serving, drizzle the pita generously with the sauce.
